A Curry Monday
I didn't like it.
It's hardest when there are a dozen things in end game, and I'm shuffling between them all, thinking they're all about to end and finding that *each* of them has something that's wrong with them. Just one more thing wrong. That's what's so maddening about all this. Just one more thing for *everything*.
I did make curry for dinner, and liked that. I actually took the chicken out of the freezer last night, the last of a Valu-Pac of legs and thighs. Good to use. I marinated them in yogurt and garam masala powder this morning, and this evening I cut up an onion, garlic and ginger, and browned the onions in a bit of oil, then added the garlic and ginger. I let them cook until fragrant, and then I added the chicken and spices and let them fry for a while until they were good and fragrant as well. Then I added the rest of the yogurt, some chicken broth, and a can of tomatoes and I scraped the bottom up as much as I could and let it simmer for and hour and a half.
The chicken was fall off the bones tender, the sauce was rich and deep and spicy. It was just really good over brown rice with a bunch of peas and carrots that were *also* from the freezer. All the marks of a good freezer cleaning dinner. I am gradually getting the hang of this and getting more and more stuff out of the freezer and eating it so that we don't have them just hanging around forever.
It smelled wonderful while it was cooking and the house smells of it now.
I'm going to sleep at 9:30. I need it
